Just when I thought I had food under control, I visited Wisconsin and succumbed repeatedly to the best cheese I ever tasted. I think cheese, with all of its fat and calories, ranks right up there with the wonders of life. After the fat and salt are removed from cheese, we're left with something that tastes and feels like rubber. Laughing Cow Lite is the only low-fat cheese for my healthy palette, but even that can't compare to the magnificent, aged-20-year cheddar cheese I sank my teeth into in Wisconsin. At one cheese store where I tasted samples and hoped my sample pieces would be at least an inch thick, I did ask whether they made "lite" cheese.
